Peperonata (Chef Jock’s Sister’s Recipe)

2 green bell peppers – cut in strips
1 red bell pepper – cut in strips
1 yellow bell pepper – cut in strips
1/3 cup olive oil
1 can anchovies
1 small jar capers
1/2 cup green stuffed olives – sliced
1 large sweet onion – sliced
4 large tomatoes (remove seeds and chop)
1 tbs sugar
Dash of black pepper

Heat oil and melt anchovies in the oil. Toss peppers and onions in oil and turn down heat to low. Cover and simmer for 15 minutes. Add tomatoes and simmer on low uncovered for 20 minutes. Add rest of ingredients and simmer for another 30 to 40 minutes.
