Pineapple Chicken

1 whole chicken
1 whole pineapple
1 TB allspice
white sweet onion, cut into quarters
1 1/2 cups pineapple juice
1 TB saute’ dust
salt and pepper to taste

Clean chicken well. Season the inside of the chicken with half the amount of the spices listed. Cube half the pineapple. Mix pineapple cubes, onion quarters and a half stick of butter together. Stuff this mixture into the chicken.

Season the outside of the chicken with the remaining spices. To the bottom of the roasting pan, add 1 1/2 cup pineapple juice. Add other half of the pineapple to the bottom of the roasting pan. Bake in the oven at 350 degrees approximately 1 hour.
