Veggie Saute’ Mediterranean Style

ART: Chef Hat

1 cup large diced zucchini
1 cup large diced squash
1 cup large diced tomato…add this at the very end
1 cup sliced red onion
3 tbs Olive oil
1 tbs butter
1 tbs chopped garlic
1 tbs Oregano
salt and pepper to taste

Saute’ the vegetables in the oil and butter until they are hot but crisp. Add tomatoes and remaining ingredients, toss and serve.
