Roasted Chicken Breast with Spinach and Garganzola Cheese

2-6 ounce Chicken breasts
1 tbs softened butter
1 tsp saute’ dust
1/2 tsp salt
1/2 tsp pepper

Rub the softened butter over the Chicken breasts, then rub with the saute’ dust, salt and pepper Bake 12-16 minutes at 350 degrees.

Sauce Ingredients and Preparation:
2 cups fresh Spinach
1/2 cup Gorgonzola (blue) cheese, crumbled
1/2 cup heavy cream
salt and pepper to taste

In a saucepan, melt 2 tsp butter and add fresh spinach. Cook until Spinach is just wilted, but not completely limp. Add the other ingredients and cook until the sauce is reduced by 1/4-1/3. The sauce should be velvety. Serve over rice or with the chicken.
