Roasted Chicken Breast with Pesto Cream Sauce

Ingredients:
2 Chicken breasts
1 tbs saute’ dust
1/2 tbs salt
1 tbs Olive oil

Pesto Sauce Ingredients:
1 cup fresh Basil
2 tbs Olive oil
1/4 cup fresh Parsley
1 tbs garlic, chopped
1/2 tbs salt and pepper

Preparation for Pesto Sauce:
Combine all ingredients in a blender, and blend. In a saute’ pan, pour the Pesto ingredients and let simmer for 2-3 minutes. Add 1/2 cup heavy cream and reduce by 1/3. Salt and Pepper to taste.

Preparation for final dish:
Rub the Olive oil, saute’ dust and salt on the chicken breasts. Roast in the oven for 10-12 minutes at 375 degrees. Serve with the Pesto sauce over top of Chicken breast.
