Balsamic Honey Pork Loin with Blackberry Chutney

Blackberry Chutney Ingredients:
1 cup blackberries chopped or chunked
1/4 cup toasted almonds, chopped
1 1/2 tbs dark brown sugar
1/4 tbs ginger
mushrooms (optional)
granulated onion (optional)

Mix all ingredients together 1 – 2 hours before serving.

4 – 3 ounce boneless pork loins
2 tbs butter
3 tbs balsamic vinegar
4 tbs honey
1 tbs saute’ dust
1 tbs cracked black pepper
salt and pepper to taste

Blend vinegar and honey together. Marinate the pork in this mixture for 1 hour. After marinating, saute pork in the butter and brush with any remaining marinade.

To serve, mound the chutney on the plate and place the pork alongside.

* Options for the chutney: use apple, apricot or your favorite fruit for this delicious addition to any pork recipe.
