Blackberry Chutney Ingredients:
1 cup blackberries chopped or chunked
1/4 cup toasted almonds, chopped
1 1/2 tbs dark brown sugar
1/4 tbs ginger
granulated onion (optional)
Mix all ingredients together 1 – 2 hours before serving.
Blend vinegar and honey together. Marinate the pork in this mixture for 1 hour. After marinating, saute pork in the butter and brush with any remaining marinade.
To serve, mound the chutney on the plate and place the pork alongside.
