Tofu, any amount desired, cubed
2 tbs Olive oil
2 cups sliced zucchini, squash and peppers
1/4 cup veggie stock
1 tbs oregano and saute’ dust
salt and pepper to taste
In a saute’ pan, heat oil and saute’ the tofu for 2-3 minutes. Add veggies and all the seasonings and saute’ for 2-3 more minutes. Add the veggie stock and just heat. The tofu will absorb the flavors it is cooked with.
