Chicken Andrea

ART: Chef Hat

2-6 ounce chicken breast
4 ounce Capicola or Prescutto
4 ounce Provolone
1 tbs Olive oil
1 tbs butter
1 tbs Oregano
1/2 tbs salt and pepper

Tenderize chicken to 1/2 its thickness. Lay 2 ounces of thinly sliced Prescutto or Capicola and Provolone cheese on the piece of chicken, roll. Place the chicken seam side down in a baking dish, drizzle with Olive oil. Season chicken with saute’ dust , salt, pepper and dot with butter. Bake at 350 degrees for 12-15 minutes. Slice into medallions and serve.
