Fried Zucchini and Mushrooms

Ingredients:
1 lb button mushrooms
1 zucchini, sliced thick 1/4 inch
2 eggs
2 cups Italian breadcrumbs
1/2 cup all-purpose flour
saute’ dust
salt and pepper to taste
peanut oil

Preparation:
Make egg wash with eggs and milk. Blend flour and bread crumbs. Dip veggies in the egg wash and bread crumb mixture. Fry in peanut oil until golden brown.

Serves 2-4
